The black pepper crab dumplings with snow peas ($13) are superb; the seared foie gras with ginger and mango ($18) is, obviously, entirely decadent. Feel free to have any of his fish dishes, but this is Texas, so really, stay with cattle: try the grilled tenderloin with onion jam and sour plum mustard ($33).''
