When Gramercy Tavern opened in 1994 the owners, Danny Meyer and Tom Colicchio, said they intended to redefine grand dining in New York. The large and lively Tavern has fulfilled this promise. Chef Tom Colicchio cooks with extraordinary confidence, creating dishes characterized by bold flavors and unusual harmonies. Service is solicitous but unceremonial. For a less expensive alternative, the handsome bar in front offers a casual but excellent menu. On a recent visit, the restaurant lived up to its three stars, with consistently fresh, inventive new American dishes like crab ragout with sweet-pea puree, braised veal cheek lasagna, and poached bass with cucumbers, fennel and pickled watermelon. Claudia Fleming's desserts remain a highlight, especially her honey pine-nut tart with roasted figs and honey-orange lavender ice cream. NYT review
